Monti Sabini olives are cultivated on three olive groves in the Sabina Hills, just outside the village of Scandriglia.
After it has been hand harvested, the fruit is quickly taken to the local mill, where the oil is cold extracted.
At no point are any pesticides or artificial fertilisers given to any of the plants on any of the lands. Olive trees are well known for being hardy, and aside from trimming the trees in the spring, we don’t like to interfere with Mother Nature.
In addition, by ensuring our land is not exploited, we are able to preserve the local landscape that is so synonymous with the Italian countryside.
With a small scale, limited production of around 1000 litres, we have complete control over the production process.
This results in olive oil with exceptionally low acidity and a distinctively delicate taste.
